how to get the CPU temperature of my ESXI in ZABBIX ?

Did you configure SNMP on your server LOM?(ILO, BMC, depends what brand server is, LOM it's called different)

You need to add to LOM an IP, enable SNMP and create a user (if you want to use SNMPv3). Then just configurea a new host on Zabbix poiting to LOM IP and add SNMP credentials.

        EctoZz_ Lights Out Management
On HP Servers it's called ILO (Integrated Lights Out), on Lenovo I think it's called IMM or BMC

i did some research but BMC is part of IPMI protocol but for some reason IPMI does not work as solution

What management tools are there on the "bare-metal" server hardware on which ESXi is installed? If it doesn't have something like IPMI on it (no matter what you call it) what can turn to the equipment and get the temperature - then you will not get it in any way.

I tried IPMI on my server but every time I try to start the service it crashes despite the fact that I have activated in the BOIS

That is, have you enabled IPMI and configured the IP address (+mask\gateway, etc.) and the user for access?
Have you tried connecting to it using ipmitool ?
                P.S.
What kind of service are you talking about that crashes?
