I don't know how many hosts/items you can monitor with that hardware, but I'm able to monitor about 190 hosts, with a total count of 7760 items (most of the items are snmp items, the rest are calculated items), about 200 triggers and a required server performance of 53.5183 with a virtualized machine with 1 CPU and 1GB of RAM

It really depends on number of values collected per second. I think that the hardware may handle around 1-4K of hosts depending on number of items and refresh intervals. Perhaps 10x more if number of items per host is very low.

In the short run it's going to come down to Disk speed, then RAM then CPU. If you don't setup your DB very efficiently you may find yourself limited to a small number of hosts. If you do setup your DB server correctly hundreds are easily possible.
