I have a doubt, for monitoring external services, ie
that is not on the server where it is
installed zabbix is necessary installation and configuration agent
Zabbix of this server??

do you mean whether zabbix agent is required to be installed on monitored host if all you are interested in is external services ?

if so - of course not, see simple checks - they all work without zabbix agent installed

I'll add a question here: if i set up server side, what do i need to set up client side? I'm on RHEL 5.5 and Zabbix 1.8.1. Is it enough to add user/group to agent machine, put config file to /etc/zabbix/ and script to /usr/local/bin/zabbix or do i need to do a lot more to set up machine to be monitored? Thanks.

not script, but agent binary - and you must also configure agent config file correctly, of course. other than that, no, i don't recall anything serious missing.
