working of zabbix

Hi ... I am working on zabbix. We have 4 switches created as hosts. The software restores the data from these switches and uses it to create graphs.
I installed the software on my own on linux but i fail to understand the working behind.

My question is: How is the data restored by zabbix and how does it create graphs from this data? ... could u please explain?

now, i have learnt that the zabbix server collects data from
1)zabbix agent or 2) the SNMP hosts
Later, this data is used to create different items as ifar as i have understood.

But what kind of data is collected from the agent and the SNMP hosts? ... can you give me some example? ....
