I'm pretty sure you go to "Configuration >> Hosts >> Click On A Hostname >> Put checkmarks in each template for the host and select Unlink and Clear" that should reset the data.
Thanks for your reply, but this solution is not feasible for me.
I have hundreds of hosts with many services. When I Unlink and clear this association and I lose all items (services) linked.
I need exactly the CLEAN option, without Unlink the template.
Well - you can do it per template:
Conf -> Templates -> "actuel template" - select all items (upper left) - at the buttom select "clear history for selected"
Else I think you have to do some direct database manipulation. Try search in the forum for specifik commands/syntax or ask at the zabbix IRC.

Perhaps I misunderstood your question , but if your are asking for a way to clear the history of an item, there is a button at items configuration screen that allows you to do just that.
You do. Imagine you have a template with a wrong-configured item and 100 hosts based on it. Cleaning history for item from template menu doesn't clear history for linked hosts, so you'll have to clear host items history individually or run an sql queue.
It did not work for me too on 1.8. I found out there is an associated bug ZBX-2061 https://support.zabbix.com/browse/ZBX-2061 . I used one of the workarounds presented above
