You may choose any interface depending upon your environment:
Following is the some basic idea:
1. Use IPMI if you want to monitor infrasture at Hardware Level.
2. Use Agent if you are moniroting things at OS Level.
3. If you dont want to install any third party service/agent on your server, you may enable snmp and start monitoring immediately. Its the most powerful tool and available in almost every smart device.
4. Use JMX if you are familiar with java technologies.
Please describe your environment i.e. what are you planning to monitor; only then someone will be able to guide you to the right path.
