What is the default granularity in Zabbix 4 and how is this possible?!

I have always wondered what time periods Zabbix is recording. As I see if I go down the graph that it is as fine grained as 1 seconds. So why doesn't that make sense to me?

I integrating a custom monitoring system into Zabbix in which a script runs every minute from cron on the same host providing the Zabbix with floating point values. As you can see here on this graph a decline starts from around 20:18:24 and I assume this is HH:MM:SS when this data what it gets from a text file is constant for 1 minute, then it gets updated then constant again for 1 minute.
