Autoregistration Add Alternate Interface Like SNMP or IPMI?

It looks to me like Hostinterface= is zabbix agent default for autoregistering a new host. Is that correct? I'm trying to setup hardware monitoring either through SNMP or IPMI to trigger on events like overheating or fan failure. It would be nice if I could set the interface to either of those rather than zabbix or in addition to would work as well.

I was looking at documentation and it looked like I could achieve this through the API, but I have zero experience with the API and just editing the zabbix_agentd.conf file would be simpler.

Yes, it's the only interface possible with autoregistration as of Zabbix 5.4. And yes, you can add a custom operation for an autoregistration action, this operation would call API to add another interface.
There is a feature request to change this though, please vote for https://support.zabbix.com/browse/ZBXNEXT-6745
