How do we monitor jitter for the quality of service in VOIP applications?

Yep, jitter is basic metric for the measurement of network quality for VOIP. But you will need some server for measurement. Some basic tools: iperf/iperf3/owping/... Run some tool and parse output to the Zabbix.
I've made one solution based on Zabbix for network quality checks (iperf, ping, mtr, ...). Unfortunately it's not open source.Devops Monitoring Expert advice: Dockerize/automate/monitor all the things.
