We are evaluating SNMP server solutions to migrate from our current provider (that we have issues with). We do multi-tenants (we use the SNMP server to monitor a slew of clients). We are going to have in total a great many hosts spread out throughout our client base. I know the host view (in monitoring or configuration) can show only the hosts from one host group, but can I create a hierarchy in that view, so that it shows a folder for each client, and if opened/expanded, I then see that client's hosts?

Not out of the box. Only view that kind of resembles, what you mean (I think) is config->host groups, where you will see all your hostgroups (if you create them based on customers) and hosts in each...
There is mod for that https://github.com/BGmot/zabbix-module-hosts-tree But its a mod, not official Zabbix product. -
