Zabbix Configuration for Multiple Independent Clients

I'm new to Zabbix and would greatly appreciate your recommendations regarding a Zabbix deployment to monitor critical devices in each of my independent client's networks. I access each of my client's networks via a separate VPN so I'll definitely need to collect host data while I'm not connected to the other client's VPN. I would prefer to collect all my clients' data into a centralized pane of glass (Zabbix Server?), however, I'm not sure that's possible. I'm planning to collect about 5 to 10 critical metrics (SNMP) for each device, with maybe between 1,000 to 10,000 devices in each of my client's networks. I haven't determined the storage requirement yet but I'll likely extend the sampling rate (e.g. 1m,15m...etc) to prevent the data storage requirements from getting out of control.

My preference would be to implement a centralized Zabbix server with a proxies for each individual client. However, I'm suspecting that the proxies might time out, or stop collecting data, during an extended disconnection period (e.g. days or weeks) from the Zabbix server. I'm suspecting that I might need to implement a Zabbix Server for each client??? This would create minor problem that I'll have to interface with multiple Zabbix instances to export data for reports and such. Feel free to provide any recommendations, or configuration pit-fall clarifications, that might help me out.

I'll be using PC with Ubuntu 22.04 for my initial Zabbix development project.

What would be the point of monitoring, if you have days or weeks of disconnection times?
Proxies can survive without a connection for a while and store data locally (refer to config options), but it is more of a emergency case, they are really not meant to be standalone things, where you connect to them once a day to retrieve data...

My goal would be to have a dashboard, with trend charts, available for each of my clients critical devices. (Email notification and event triggers will be added once I get familiar with Zabbix.) This would also provide me with the forensic data to proactively address performance degradations with their wireless networking equipment. The fact that I'm accessing each client's network over VPN requires that Zabbix will need to stand alone while I'm connected to other clients' networks.
