I see that I can configure more than one zabbix server in the client config file.
For a reasonably small environment (say 200-300 hosts), is it possible to have all hosts reporting to TWO zabbix servers, one at a primary site, one at a DR site?
This would add some traffic for sure, but would also eliminate the need for database replication (we use mysql)
I also understand that each zabbix server would be maintained separately, meaning any changes would have to be done manually on each server.
Is this a bad idea to even consider?
I would be OK with the fact that each zabbix server may not always have identical data...just looking to be able to continue monitoring if something happened to the primary server, OR to the primary site.

If you are ok with all that, then yes, it is possible.
