If you're using SNMP, Zabbix can monitor anything that your snmp agent (probably snmpd on Linux) exposes. That means the question is really about whether your SNMP implementation can monitor the log file(s) you want it to monitor. You'll probably need to dive into your SNMP documentation for the client systems to find out, and you may need to look at what MIBs are available that might extend snmpd to be able to do what you want.

I expect that most people that need to do general log file monitoring would use the Zabbix agent in active mode, rather than trying to extend SNMP to do it. If you're determined enough, though, it's probably possible.
