Just asking because of the ways debian packages currently going. Does someone sees benefit having server and proxy on the same host?

IMHO, yes: but just for testing purposes, not in real environments.
And you should know what you are doing.
It is - more or less - the same question as: is there any purpose
in running two ZABBIX servers on the same host.
First of all, both will use the same port for listening (10051) per default.
So you would have to configure the server to use, say, 10052 to connect
to the proxy and the agents monitored by the proxy
to connect to the same port.
Second: the name of the DB might be the same. although you could avoid
that in a package.
IMHO a setup like this will completely confuse a normal monitoring user
and you'll get a lot of support calls or bug reports, I guess,
from anybody trying to do an installation like this.
We do run a 1.4.6 server and an 1.6.1 server on the same system
to test both. But you have to be very careful in choosing a
non-conflicting DB name, ports, etc.
As I said, if you know what you are doing ...
If I were you, I would specify that the Proxy and the Server packages
are conflicting and can't be installed on the same system.
This will avoid some headaches but might induce some questions from
experienced persons trying to do exactly that.
It's a dilemma, I know: I am doing the ZABBIX RPM packages for our company
