Hello. I'm using Zabbix 5.2 appliance for testing and notice this version still uses PHP 7.2.24. This version of PHP is no longer supported. See https://www.php.net/supported-versions.php. Can this be updated in a future appliance version?

I think the base OS was CentOS 8. If so, the vulnerability issues etc. should have been fixed in RHEL 8 and reflected in CentOS 8. If CentOS 8 continues to be updated, even without official PHP support, there will be improvements at the source level published by Red Hat.
If you need official support, it's better to use RHEL 8 or an environment where support services are provided instead of an appliance.
