Every Sunday night @ 11:15pm my zabbix server dies

It appears that it is being caused by something apache related.

The attachment is the # of apache2 processes running. As you can see, it shoots up to over 100 right around 11:15pm every Sunday night.

Is there a process that needs to be tuned so that this doesn't take my zabbix install down every time?

check dmesg - any oom kills listed ?
so you'd probably have to figure out why apache jumps to such high numbers and solve that.
