There's nothing specific in frontend in desplaying latest data regarding value types. I really have no other idea than to turn to Zabbix support team so that they could have a remote session with you and check things. But this is not free of course.

Is there a mechanism to enable debugging to trace the query and responses? I have sql logging enabled and could trace the queries being performed perhaps?

Do you perhaps use Elastic in frontend?
As for debugging, you can enable Debug mode in frontend and when accessing "Monitoring -> Latest data" ensure frontend is accessing history_uint table.
