We have a restart about once a month. I set up maintenance with the period being daily, starting at midnight for 1 day.(that should cover everything 24/7 correct?) The thought was then I could leave that tab alone, and just set the active period when I needed to. So I set the date as today, the time 3:50 to 7:30 this morning. However I still got many many emails all during this time. what did I do wrong?

It's vice versa. You create maintenance, which is active since/till and within it you create periods, when the maintenance will be turned on. E. g.
Maintenance: active since 21-11-2019, active till 23-11-2019
Period: daily, from 00:00, Maintenance period length: 1h
In the following set up maintenance will be turned on 3 times:
21-11-2019 00:00-01:00
22-11-2019 00:00-01:00
23-11-2019 00:00-01:00
