Upgrades are fully covered in the documentation, and going from 5.0.x to 7.2.x is fully supported. The only complication with skipping so many versions is that you also need to read the upgrade notes for the intervening versions (5.2, 5.4, 6.0, 6.2, 6.4, 7.0) because there may be important upgrade notes for any of those versions.

In many ways the upgrade you're doing is easier than doing an in-place upgrade on the same server, because if you run into upgrade issues with the database once it has been imported on the new database server, you can fall back to your 5.0.44 install while you investigate how to fix whatever issue you ran into.
