Is it possible to create my own simple check say for instance, I want to monitor uucp service? Is this possible ? I would appreciate any answer or help.

ZABBIX 1.3.4 (beta) and later releases will support this. New type of item, external check, can be used to enhance functionality of server side checks.

I'm using 1.1.6, in the interim is it possible to create some type of key and trigger to monitor this kind of service "uucp"

Yes, you may use a combination of crontab, your uucp-check script and zabbix_sender. It will work perfeclty.
