How to set up measurement retention and monitoring interval

Hi there!
I'm using zabbix to monitoring some docker containers.
I want to set zabbix to keep the measurement data for each metric (for example memory usage, cpu total usage per second etc ...) for 12 months, how can I do it?
Also I would like to change the time interval to do the monitoring of my containers, for example I would like the agent to check the containers every 5 minutes, also how can I do it?
