A later conversation with my co-worker has indicated that he can actually set the broker to use plain JSON mode instead of Sparkplug mode. </facepalm>
However, we've already spent enough time figuring out how to work around the Sparkplug format that this is not something that we want to go back and re-visit. At least, not at this stage.
