We are new to Zabbix and need a way to monitor Windows servers without deploying agents but still want to get as much info out of them as possible. Can we monitor the servers in Zabbix via SNMP?

Yes, SNMP is an option. You would know it, if you read at least a bit of docs...
But do you think configuring SNMP on those hosts is somehow easier, that deploying an agent? -

Update: I found that SNMP attempts now that I have the "Windows by SNMP" template on the Host. But now I am getting cannot retrieve OID: '.1.3.6.1.2.1.1.4.0' from [[XX.XX.XXX.XX:161]: timed out.Comment
