You need to edit the Host Prototype rule on the discovery template, which I think is Template Virt VMware in your case. In there there is the option to specify which groups the discovered virtual joins.
As this is linked to the discovery rule if you want to make changes to individual templates on vm's you will need to full clone the host and then delete the original before saving the new one.
Can you please explain which kind of discovered hosts you want to add to Host Group ?
In case they are auto-discovered by Zabbix or Auto-registered with Zabbix-client (Configuration -> Actions -> Disovery/Auto-registration), then you can choose the Operations:
Operation details:
Operation type: Add host to group
Host groups: <Select your group>
Press Add and then Update. And don't forget to Enable the Action

Then do a full copy of the discovered virtuals. Before saving that then delete the original then save your new copy. With that you'll be able to change groups at will... When the discovery runs again it won't recreate the item as it's already existing.
