I'm not sure I mentioned this before but. also try to perform this checks as "system.run"
    Code:
    system.run[curl -s -u guest:guest -X GET http://<serverip>:15672/api/overview | jq .message_stats.deliver_get_details.rate]
    system.run[curl -s -u guest:guest -X GET http://<serverip>:15672/api/overview | jq .message_stats.publish_details.rate]
Again the same result, gaps in the graphics.

Sorry to ask this but after so many test I'm getting confuse.
My rabbit server is being monitor by a ZABBIX-PROXY so.... the proxy is the one asking for the checks, but this two checks are actually being execute on the rabbit server, I hope I'm right.
On the rabbit server the agent is showing no data, and yes the agent IS running.
On the zabbix-proxy side I see a huge amount of data (this proxy monitors a lot of servers) but nothing related to my rabbit... so.... really anoying.

One quick idea, are you monitoring CPU load on host where Zabbix agent is running? Perhaps the delays are caused by lack of CPU resources.
