So here is another issue I came across.

I am pulling metrics off a remote server via a discovered item and do some calculations.
I have noticed, that the value in Zabbix did not change despite the remote server has different values.
When I opened the item in Zabbix and click 'test' then it displayed the correct and actual values to me.
However in latest data it kept displayling old data despite updating every 5 minutes. It did not display any errors.
I have manually executed the item several times which did not help. The old values remained.
Only after a restart of the Zabbix server service the values were updated.
I have yet to wait, if that has resolved the issue or if updating fails again when the values from the remote server change.
This is very scary as when the values in Zabbix are unreliable without any error messages, then how can I trust them?
